Ingredients You’ll Need for Your Meat Kibbeh Recipe

Before you begin, gather the following ingredients:

For the Kibbeh Shell:

2 cups of fine bulgur wheat
1 pound of lean ground beef or lamb
1 medium onion, finely chopped
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of ground allspice
Cold water

For the Kibbeh Filling:

1 pound of ground beef or lamb
1 medium onion, finely chopped
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of ground allspice
A handful of pine nuts, toasted

Step-by-Step Preparation of Your Meat Kibbeh Recipe

Step 1: Preparing the Kibbeh Shell

Start by rinsing the bulgur wheat under cold water until the water runs clear. Then, let it soak in cold water for 30 minutes. Once the bulgur wheat has soaked, drain it well and set it aside.

In a food processor, combine the ground meat, chopped onion, salt, pepper, and allspice. Process until the mixture becomes a paste. Then, add the soaked and drained bulgur wheat to the meat mixture and process again until well combined. This forms the shell of your kibbeh.

Step 2: Preparing the Kibbeh Filling

In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned.

Then, add the salt, pepper, allspice, and toasted pine nuts. Stir well and remove from heat. This will be your kibbeh filling.

Step 3: Assembling and Cooking Your Meat Kibbeh

Take a portion of the kibbeh shell mixture and form it into a ball. Make a hole in the ball with your finger, then stuff it with the kibbeh filling. Close the hole and shape the kibbeh into a pointed oval or a flat disc.

Once all your kibbehs are ready, heat your oil in a deep fryer or heavy-bottomed pot. Fry the kibbehs until they’re golden brown and crispy. Once cooked, drain them on a paper towel.
